Salsa'd Jerk Chicken with Grilled Bananas and Black Beans

That's the best title I can come up with...

Recipe by Jason Leigh

Ingredients:
-----------

Chicken breasts with skin on. Marinade in the J mixture over night if possible.
See below.

Bottle of salsa (warmed)- a slightly sweet pineapple salsa is really
good with this but regular salsa is fine.

Couple of peeled firm bananas.

Dash of salt

Tablespoon butter

Can of black beans.

Couple tablespoons of sour cream.

The J Mixture:

Use these quantities very very loosely. Whatever it takes to make enough marinade
for the meat is fine. By the way this is a really good grill marinade for
ribs too.

Generous amounts of Caribbean Jerk seasoning (by McCormick on the spice aisle).
Quarter cup Balsamic Vinegar
Quarter cup Soy Sauce
Tablespoon sugar
Quarter cup sherry
Half cup water

Instructions:
------------

1. Grill the chicken till done.

2. Brush bananas with butter and sprinkle with salt.
Grill the bananas till tender.

3. Heat beans and drain.

4. On a plate:
Place chicken breast and pour warmed salsa on top.
	Place grilled banana on side.
Serve beans with tablespoon of sour cream on top.
