Yorkshire Pudding

2 eggs
1 cup milk
1 cup flour
Grease an iron skillet with corn oil. Preheat the oven to 450.
Blend above ingredients in a blender and pour them into the skillet.
Bake 20 minutes, turn the heat to 350, and bake another 15.
During cooking it puffs up and later falls. This is normal.
Historically it was stuck under a roast to catch the drippings.
Variations

Cinnamon and nutmeg in the batter make a good dutch pancake, served
with a little honey, fresh berries and lemon squeezed over the top.
Instead of the iron skillet, use a muffin tin, fill each indentation
partway with batter, add some grated gruyere cheese and fill with more
batter. The results are called gugeres. I'm not sure I'm spelling it
right.
Add banana slices before cooking, or sauteed vegetables, or whatever
leftovers you have lying around. Salsa, bratwurst, coffee grounds..?
